A must try recipe: Chocolate Bar Brownies
Canadian Living's Annabelle Waugh joined us this morning to chat about "The Complete Chocolate Book”. While she was here, she shared a brownie recipe that is bound to make anybody with a sweet tooth happy. Enjoy!
Chocolate Bar Brownies
Topping rich brownies with candy is just gilding the lily, isn’t it?
But it’s so good you’ll never want to go back! Experiment to find your favourite topping – especially around Halloween, when there’s lots of leftover candy around the house.
⅔ cup butter
7 oz (210 g) bittersweet chocolate,
5 oz (140 g) unsweetened chocolate,
1½ cups granulated sugar
2 tsp vanilla
1 cup all-purpose flour
1 tsp salt
5 oz (140 g) bittersweet chocolate,
⅔ cup whipping cream (35%)
1 cup chopped chocolate-covered
candy (such as Turtles, Maltesers,
After Eights or Rolos)
In saucepan, melt together butter, bittersweet chocolate and unsweetened chocolate over medium-low heat, stirring until smooth; let cool for 10 minutes.
Whisk in sugar and vanilla; whisk in eggs,
1 at a time. Stir in flour and salt. Spread in parchment paper–lined 13- x 9-inch (3.5 L) cake pan; smooth top.
Bake in 350ºF (180ºC) oven until cake tester inserted in centre comes out with a few moist crumbs clinging, about 25 minutes. Let cool in pan on rack.
Topping: Place chocolate in heatproof bowl. In saucepan, bring cream just to boil; pour over chocolate, whisking until smooth. Let cool for 3 minutes. Spread over brownies; sprinkle with candy. Cut into bars.
Makes about 40 bars.
