Rice and Bean Casserole 1 can red kidney beans drained 1 can white kidney beans draine 1 cup rice 1 can italian tomotoes grated cheese (I like a good cheddar) 1 green pepper 1 red pepper 1 onion chopped a good clove of garlick cumin corriander currie hot peppers/ hot sauce (if desired) fry onion and garlick add beans rice and tomoatoes, reduce heat add spices and simmer till rice is cooked it tomato juice transfer to casserole dish add grated cheese on top cover and bake at 350 till crispy (about 20 min) let cool a bit and enjoy
